摘要:本实验以明胶,壳聚糖为原料制备复合膜,通过测试膜的厚度,吸水率,透水汽率,透光率以及透氧性等指标来研究可食性膜的成膜条件。实验通过控制明胶,壳聚糖的不同质量比,pH环境以及增塑剂的添加量这三种单因素来测定其性能。结果表明,最佳单因素为明胶,壳聚糖比例为1.5∶1,pH为4.0以及甘油添加量为0.5g。最后通过正交试验得出水浴温度70℃,膜干燥温度在50℃下干燥5小时,明胶,壳聚糖比例为1.5∶1,pH为4.0以及甘油添加量为0.5g所取得的膜的性能最佳,此时测得数据为膜的平均厚度为0.028mm,膜的吸水率为486%,膜的透水汽率为0.32g*mm/h*m2*KPa,膜的透光率为63%,膜的透氧率为18cm3/m2*24h*0.1MPa。

Abstract:The present experiment was prepared from gelatin, chitosan film by the film thickness, water absorption, water vapor permeability rate, light transmittance, and oxygen permeability index of the test to study the film formation conditions of the edible film. By control of the gelatin, chitosan of different proportions, pH environment and a plasticizer addition amount of these three single factor to determine its performance. The initial results of the experiment show that the best single factor gelatin, chitosan ratio of 1.5:1, pH 4.0 and glycerol addition level of 0.5g. Obtained by orthogonal experiment bath temperature of 70 ° C, the film is dried in the temperature of 50 ° C under 5 hours of drying, gelatin, chitosan ratio as 1.5:1 for pH 4.0 and glycerol dosage of 0.5g to obtain the film performance best.The measured data for the average film thickness is 0.028mm, the water absorption of the film is 486%, the water vapor permeability of the film was 0.32 g * mm / h * m2 * kPa, the light transmittance of the film was 63%, the film oxygen permeability 18cm3/m2 * 24h * 0.1MPa.
